You also might want to investigate webmin for help in configuring services.
It pushes you along the right path and is good for someone new to Linux to start configuring server level services.

Depending on the number of users you should be fine unless both ftp and www go
well over 100 at once. CPU-wise you could probably do more, RAM might become
an issue.
As for a HOWTO, for www theres the Apache HOWTO, something similair for FTP.
Mail might be a bit different... there are loads of sendmail FAQ's, POP/IMAP
is documented in the xinitd docs IIRC. And those don't need configuring much
anyway. If you don't want sendmail, the website of your preferred mail server
software should have some pointers.
A nice overall doc might be the TrinityOS guide, do a Google for it. It takes
you along every step on the way.
