	In my opinion you are not sacrificing security that much with
Sendmail.  The more current versions have been tightened but quite a bit
and there's some basic sysadmin security steps you can take to make
things safer.  The bottom line (again, IMO) is do you need the add-ons? 
If you need them then run Sendmail.  If not then run Postfix.
