You could just use the /sbin/ip command like this :

/sbin/ip addr add dev eth0 192.168.0.1/24

and

/sbin/ip addr ls

will show you what all you have on there..

You have already had a few replies on how to do this via the GUI, but I 
thought I might as well pitch in with this - most Server/ gateway 
machines dont really have a GUI installed on them.
